Seeing KFC and McD fried chicken, who doesn't want to know how to make crispy fried chicken ...
Apparently ... the key to making crispy fried chicken is in flour and the manufacturing process.
Note: It is recommended to fry with a Deep Fryer Pot and use a lot of oil (deep frying technique) so that the chicken is fry evenly and crispy.
Here are the complete recipes and how to make the right KFC fried chicken. Come on, let's see ... (Read slowly so that no one is left behind).
Material:
#.1 kg of chicken, cut into pieces
#.1 tsp garlic powder
# .1 teaspoon of smooth pepper
#.1/4 tsp dry red chili powder
#.1/2 tsp of fine salt
#.The oil for frying
#.#.Liqu Coating Material:
#.300 ml of cold water / ice water
#.300 g of high protein wheat flour (advice, twin chakra cap)
#.40 g of cornstarch
#.1/2 tbsp. Of milk powder
#.1 egg yolk
#.1/2 tsp baking soda
#.1/2 tsp of fine salt
#.1/2 tsp fine pepper
Dry Coating Material:
#.400 g of high-protein wheat flour
100 g of cornstarch
1/2 tsp baking soda
1 tsp chicken flavored instant broth powder
1 tsp garlic powder
1/4 fine salt (if you want spicy chicken flavor, you can add chili powder)
How to make:
1. Liquid coatings: Mix flour, cornstarch, milk powder, baking powder, pepper, salt and zinc. Stir well. Add the egg yolks and water little by little while stirring until well blended. Store in a refrigerator / cool place.
2.Dry Coating: Mix all dry coating materials. Stir well. Set it aside.
3.Season chicken pieces with pepper, salt, garlic powder and red chili powder. Stir well. Let stand 15 minutes so that the spices are absorbed
4.Roll the chicken pieces into a dry coating until the entire surface is covered in flour. Dip it into a liquid coating and roll it back into a dry coating while kneading it. Do it up to 2 times if you want extra curry chicken. Do this method until the chicken runs out.
5.Heat oil, fry the chicken in a lot of oil with medium heat. Cook until the chicken is cooked, brownish yellow and dry. Lift, drain.
6.Kentucky Fried Flour Chicken is ready to be served with sauce & chili sauce.
